Research Assistant - Food Chemistry
Sanjila Marasinghe is currently a M Phil Research Assistant with the Food Chemistry project at the National Institute of Fundamental Studies (NIFS). She received her BSc (Food Science & Technology) from Sabaragamuwa University of Sri Lanka in 2012 and her MSc (Clinical Biochemistry) from the University of Peradeniya and 2017. Sanjila joined NIFS in 2018 and her research focuses on antioxidative and anti-diabetic activity of partially defatted coconut pairings of indigenous coconut varieties of Sri Lanka. Her research interests include development of functional foods, phytochemical constituents and bioactivities of underutilized fruits of Sri Lanka, value addition to by-products of food industry, genetic polymorphisms of human serum PON1 enzyme.
